RAY BAKE is a newsletter that sees baking as a means of radical imagination. Through interviews, essays, and recipe development, I explore regenerative and soil-building ingredients and the ecological systems behind our food. We have to love the world to take care of it, and I think a well-made treat can help.
This newsletter is the virtual counterpart to my Hudson Valley-based micro-bakery, where I’m making all the recipes I share here and vending at farmer’s markets and pop-ups in the Kingston, NY area. Almost all the baking I do is vegan; I see animals as part of a sustainable food system, but I think we rely too heavily on them in baking and I’m interested in breaking our chemical dependency on eggs and butter when we’re craving a baked good.
